HuuHuu Thanh.
Pho from a pot that empties. The hall does not wait.

What people get wrong
They cook a set amount. Saturday after lunch the pho can be gone. Closed Sunday and Monday with the hall. This is not Hung Vuong on Hopkins. We last walked this on 2026-09-20. Hours move with the week. Checking the shopfront keeps the night easy.
What is Huu Huu Thanh known for?
Huu Huu Thanh is known for pho that tastes like someone made a finite pot, because they did, at a food-court counter inside the Irving hall rather than on a Hopkins shopfront. You walk out of Footscray station, cross Irving, and the market hits you before any menu does: trolleys, ice, coriander, a sitting of plastic stools and shared tables that is not pretending to be a restaurant. Stalls 82, 83 and 84 sit in that body. Steam. A wall board. Vietnamese at the counter. You point if you need to.
Michael Vuong is the name on the Footscray Market trader page, ten years on these stalls, traditional soups at a market price, and a warning they cook a set amount each day. That warning is the plot. You are not owed a bowl because you found the pin. You are owed a bowl if you arrived while the pot still existed. Dani Valent at Good Food, January 2026, names deeply flavoured chicken and beef pho, made daily, usually sold out around lunchtime, plus creamy congee. The suburb uses this counter as a market breakfast and a market lunch, not as a dinner booking.
The Westsider, June 2024, came for chao and stayed for it: pork offal congee with innards cooked to doneness, chicken, fish, or plain porridge with a chicken coleslaw on the side. That is still this stall. Saturday the hall pumps and you wait for a stool. Tuesday is quieter produce and a better chance at a table. Either day, the sport is arriving while there is still soup. You eat, you shop, you leave with herbs. That is how this room earns its keep.
Closed Sunday and Monday with the hall. If you Googled best pho and walked Irving at 4pm on a Wednesday, this stall is already dark. The soup does not care about your itinerary.
What should you order at Huu Huu Thanh?
Order the pho while it exists. Beef or chicken. The Good Food plate is rare beef flank and meatballs if that is what the pot still has. Small, medium and large show up as the working sizes. Do not arrive as a committee of eight at 1:30pm on Saturday and expect a banquet. The pot is the portion control. Directories still tell people to get in before 9:30am if they wanted a stool without a wait. Treat that as a strategy, not a widget.
If chicken is already gone, that is the finite pot talking. Recurring notes say chicken can vanish while beef remains. We are not printing a minute. Ask what is left. Combination bowls exist on those same notes. Beef bones on the side, while stocks last, show up as a morning ask, one per table, not a right. Vegetables often come separately. The table is chilli, lime, sauces. Build the bowl. Do not wait to be hosted.
Congee if the pho has already sold, or if you wanted breakfast that is a spoon. Chao long is the offal bowl the Westsider loved. Chao ga, chao ca, or plain with the chicken coleslaw if innards were not the morning. Ask. Do not recite a blog to the person holding the ladle.
Eat in the market mood, sharing a table with strangers, then shop. A bowl, a bag of herbs. Do not treat this sitting as a photograph and a rideshare.
Hours, payment and queues at Huu Huu Thanh
Quoted hours follow the hall, then collapse earlier. Footscray Market is Tuesday and Wednesday 7am to 4pm, Thursday to Saturday 7am to 5pm, closed Sunday and Monday. Directories often print this stall as about 9:30am to 2:30pm. The real clock is the pot. Good Food's lunchtime sell-out matters more than a widget. Glance at stalls 82 to 84.
Cash is the working assumption at this counter. Recurring notes say notes or a bank transfer that needs a signal the hall does not give you. Bring cash. Walk-in. There is no booking widget for a finite soup. Early is a strategy. Saturday is the crush. Tuesday is quieter. If the shutter is down, that is the publisher. Do not invent a second Huu Huu Thanh on Hopkins from a mashed aggregator slug.
Sunday and Monday the hall is locked. Public holidays can kill a Tuesday. After 3pm on a market day you are gambling. After 4pm on Tuesday or Wednesday the hall itself is winding down. Late lunch here is a rumour you tell yourself on the train.
How do you get to Huu Huu Thanh in Footscray?
You get to Huu Huu Thanh by walking out of Footscray station, crossing Irving, and entering the hall, then hunting stalls 82 to 84 in the food-court body. Do not hunt it on Hopkins. Xuan Anh faces Hopkins from the same building. This pho sits inside. Tram 82 and the station buses dump you on the same block. You do not need a car for this bowl. You need to read a stall number.
If you did drive, the Irving Street deck is the market park. Albert Street is the plaza. Wrong deck, wrong building, wasted ten minutes with ice in a bag. This pho is stalls 82 to 84, not a street pin.
After dark this stall is not the plan. The hall does not do nightlife. Stay on Irving back to the station rather than inventing a mall shortcut with a bag of bones.
