What is Matsu known for?
Matsu is known for Footscray kaiseki: a seasonal set, Victorian produce, Japanese technique, and a counter that still only seats twelve.
You walk Barkly from Footscray station to 275. The door is small. The room is not a secret laneway. Inside it is a tasting you booked weeks ago, or you are not inside. Zhang watched Lee plate Inaniwa udon with Winter Creek truffle and Tasmanian abalone, Ballan wagyu in shio koji, seafood balls in dashi finished with NSW yuzu. Those plates will not still be on. The method will. Hassun is the seasonal cluster. The pine tree in the name is Lee's house symbol, not a logo on a hoodie.
Lee started on the tempura station at Kenzan. Hong is co-owner and partner. They left a four-seat room because 32 diners a week could not hold the demand. Lee told Zhang that 1000, 2000, even 3000 people tried a drop. They took the former Poons shopfront, renovated five months, opened in June, and kept the count at twelve. A hibachi arrived so they could do warayaki, rice straw on intense flame. When Broadsheet visited, that flame was on hiramasa kingfish sashimi, a grassy smoke and a light crust. Japanese iron pots replaced Western fryers for a lighter tempura. Zhang watched zosui, a rice soup with egg and chive under crayfish-tail tempura, tenkasu and aburaage. You came for that sitting, not for a burger that wandered in off Barkly.

The street noise on Barkly does not come in. You will not check your phone between courses without feeling like you wasted a drop. That is the sitting. Twelve is not a nightclub. It is the whole house.
What should you order at Matsu?
You should order the kaiseki. There is not a second menu hiding for people who wanted dumplings.
Sake pairing if you wanted the house match at $98 on the house page. Skip the pairing if you already knew your bottle story, and still do not bring a surprise BYO attitude to a room that did not ask. Hassun is the course to pay attention to. The rest of the set is seasonal. Zhang's truffle udon, wagyu and green-tea ice-cream with monaka, black-sugar syrup and kinako are reportage, not a standing order. The seafood balls in dashi with NSW yuzu were a highlight the week Broadsheet sat. Ask nothing of the 2025 plate except that the method stayed.
Allergen talk belongs in the booking, not at the counter with eleven other people watching the clock. Do not ask for a la carte sushi. Do not arrive without a booking and hope a seat died. Twelve seats. That is the whole capacity conversation. Miss the drop and you wait. Charm is not a fourteenth chair.
Eat it here, at the pace the kitchen set. A tasting-menu night is not a crawl. Stay for the last course. Then walk the lit spine. You just paid $265. Behave like that is true. Barkly after a kaiseki is a walk, not a second dinner.

Book. Pay as the house instructs. This is not a cash Irving stall. Cards are the point. If the drop failed, you are not eating here by charming the door. Hong and Lee built a room that already turned thousands of refresh attempts into folklore. You arrive on time because the set starts when they said it would. The room is already a clock. Twelve seats fill. There is no holding bar. If you are late, you are eating a course you did not see plated. That is not atmosphere. That is a twelve-seat house doing the job they advertised.

You get to Matsu by walking Barkly from Footscray station to 275, a small kaiseki door on the lit spine, not a walk-in sushi bar.
Read the number on the glass. 275. You are on Barkly. The glass is small enough that you will overshoot if you are still hunting a sushi bar. Stop at 275. The door is the sitting. You booked weeks ago. Be early enough to read the number, not early enough to loiter like a walk-in. If you drove, meters and side streets, not the Irving market deck unless you already knew the walk. Do not leave a tasting-menu night to a 9pm hunt for parking. Twelve seats do not hold a late apology.
After the sitting, Barkly or Hopkins back to the station. Paisley is not the night shortcut. Walk the lights. You paid for a set. The walk is part of the bill. Do not invent a second dinner on the way home and blame Footscray for being full.
