What is To's Bakery known for?
To's is known as Hopkins' other banh mi: a fluorescent Vietnamese bakery at 122 where pork buns face the street and the kitchen behind the glass is bigger than the room you stand in. You walk out of Footscray station onto the lit spine. At 116 the line is already a civic event. Six doors later the window is doing a quieter job. Rows of plump buns. Cases of cake and pickle. Steam. A counter that does not pretend to be a dining room. You came because you wanted bread and you did not want to wait behind a listicle.
Broadsheet, 13 September 2019, already called the staff busy after a decade of cheap, cheerful turnover. Ella Thomas shot the cases. Regulars flock daily for barbecue pork buns and combination buns, mushroom with Chinese sausage and egg, then a roll they eat walking. The copy was blunt: do not sit. The room still agrees. This is not cafe seating. This is a Hopkins counter that feeds the street and sends you back into it.

Order a pork roll if that is why you walked, a barbecue pork bun if the window already decided for you, and tofu if you came to pick a side in the On the Grid fight. You are in a one-stop Viet bakery, not a pho room. The plot is bread, then whatever the case is still holding, then the street.
You want the crispy pork if Broadsheet's special still sits on the board. A standard roll was $5.50 on that 2019 card. The crispy pork and the specials were $6.50. Ask what it costs today. Combination bun if you wanted sausage and egg in the same dough. Older diner notes keep naming a breakfast bun with egg and onion. Ask whether that bun is actually on. Eat it on Hopkins. A bag sitting while you hunt a stool is how the crust dies. If you wanted the Nhu Lan crackling, walk to 116 and join the queue like an adult. If you wanted the market tiger roll, come on a hall day and find stall 223. If 122 is dark, those are the backups, not a secret second To's hiding in an arcade.
Saturday morning is when the window is still a morning object. Noon is both bakeries busy and you choosing based on length, not doctrine. A Wednesday roll still works here. A Wednesday pho two doors along does not. If you wanted coffee as the point, you are on the wrong strip. This door sells bread. Take it and keep walking.

Read the glass. Pork buns in the window. 116 is the critic queue. 128 is pho. 98 the other way is cannoli. You are on the pavement. If you are still hunting an aisle you have not arrived.
Tram 82 and the station buses hit the same block. If you drove, the Irving Street deck is the market park. Hopkins meters if you only came for a roll. Leeds is Pho Tam, a different starch. Do not leave the bun in a hot car. Eat standing up like the rest of the strip, then finish the walk.
At night, stay on Hopkins back to the station. Moon Dog at 54 is the big room further west. This bakery will be shut by then. A 7:30 widget is not a dinner booking. Plan daylight, and read 122 on the fascia before you join someone else's line.
